Lobster A shellfish similar to crayfish and crab. There are two varieties of the clawed lobster, found in the Northern Atlantic and Mediterranean, this lobster has larger fleshier claws and a wider tail, almost blue-black in colour, that turns bright red when cooked. The spiny or rock lobster is brownish pink in colour. The flesh of the clawed lobster is slightly sweeter and tender than that of the spiny lobster. Use: It can be boiled, steamed, grilled. The meat can be used in salads, curries, biryanis and various other seafood dishes. |
