Courgette and Parmesan stuffing
Ingredients

butter

onion, chopped

garlic cloves, chopped

courgettes, grated
375 ml
basmati rice, cooked
125 ml
Italian parsley, chopped
250 g
ricotta cheese, crumbled
100 g
Parmesan, grated
Method:
Preheat the oven to 180 ºC.
Heat the butter in a frying pan. Add the onion and garlic and cook until soft. Add the courgettes and fry for 2 minutes. Add the rice, parsley and cheeses.
Place the stuffing in a baking dish and bake for 20 minutes.
