Simple vegetable pasta
Ingredients
500 g
fresh or dried pasta of your choice
30 ml
olive oil
1
onion
3
fat cloves garlic
1
red or yellow pepper
4
baby marrows
5 ml
chicken or vegetable stock powder
30 ml
or a 'splash' of white wine
pinch sugar
salt and milled pepper
1
large handful spinach leaves
1
handful fresh basil, parsley or origanum
Method:
Cook pasta in lots of salted boiling water, with a little added oil, according to packet instructions.
Meanwhile heat olive oil in a large pan.
Add onion and garlic and sautT for a minute or two.
Add pepper strips and stir-fry until just beginning to soften – about two minutes.
Add baby marrows, stock, wine, sugar and seasoning.
Cook over medium heat for five minutes.
Add spinach and herbs, adjust seasoning and cook until done.
Toss mixture into warm pasta, drizzle with a little extra olive oil and serve with a wedge of Parmesan for grating.
