Frozen delight
Preparation time: 20 minutes plus freezing
Ingredients
70 g
wholewheat breadcrumbs
100 ml
chopped almonds or peanuts
1
large egg, separated
200 ml
low fat natural yoghurt
100 ml
Nestlé Ideal Evaporated Milk
10 ml
grated orange rind
50 ml
castor sugar
60 ml
raisins
1
pineapple, peeled and thinly sliced
Method:
Spread the breadcrumbs and nuts on to a baking tray. Place under a grill and toast until golden. Set aside to cool.
Beat the egg yolk and stir in the yoghurt, evaporated milk, orange rind, castor sugar and toasted mixture.
Beat the egg white until stiff and fold gently into the yoghurt mixture. Pour into a container and freeze until starting to set.
Remove from the freezer and beat with an electric beater until smooth, stir in the raisins and freeze until firm.
To serve, grill the pineapple slices and use to decorate the servings of frozen dessert.
