Grilled steak with ratatouille
Preparation time: 30 minutes
Cooking time: 15 minutes
Ingredients
800 g
beef fillet
1
packet instant steak marinade
RATATOUILLE
30 ml
olive oil
3
cloves garlic, chopped
1
onion, finely chopped
1
medium aubergine, finely diced
3
tomatoes, peeled, seeded and finely diced
1
red pepper, seeded and finely diced
2
courgettes, finely diced
125 g
black olives, pitted and finely chopped
30 ml
chopped parsley
salt and pepper
Method:
Make marinade according to the packet instructions. Slice fillet into 3 cm thick slices. Place in a shallow dish, cover with marinade.
RATATOUILLE: Heat the oil in a deep frying pan, add the garlic and onion and sauté; over a low heat until soft. Add the remaining vegetables and cook, stirring occasionally, for 10 minutes. Stir in olives and parsley. Season to taste.
While the ratatouille is cooking, place pieces of marinated fillet on a grid and grill over a medium heat for two to three minutes on each side, basting with the remaining marinade.
TO SERVE: Spoon ratatouille on serving plates. Top with steak and serve immediately.
