Method:
One can never have to much Vitamin A, that is especially good for maintaining good eyesight and a healthy skin.
Main item
Carrots are loaded with beta-carotene rich in pro-vitamin A. Whip up this easy carrot and chickpea salad for a nice side for your evening meal, then conveniently pack it for lunch the next day. Mix the carrots, raisins, sesame seeds, chickpeas, parsley and salad dressing in a mixing bowl. Season with salt and black pepper to taste. Easy peasy and it serves 10.
Treat
Mangoes are also a good source of Vitamin A, besides also being an excellent source of Vitamin C and E. Slice up a mango into cubes and add a couple of toothpicks for a delicious healthy sweet treat.
