Grilled mealies with chilli, coriander and cumin butter

Preparation time: 15

Cooking time: 15

Ingredients
3 red chillies, finely chopped (remove the seeds for less heat)
250 g butter at room temperature
5 ml ground cumin
1 a handful of fresh coriander leaves, chopped
8 fresh mealies, husked
5 ml salt and freshly ground black pepper, to taste

Method:
1. Prepare the butter: Mix all the ingredients, apart from the mealies and salt and pepper, until creamy. Place in a serving dish and leave to one side.

2. Cook all the mealies for approximately 8 minutes in water and drain. Grill them over medium coals or under a preheated grill until cooked and black specks start appearing on the kernels.

3. Flavour with salt and freshly ground black pepper and serve with the flavoured butter.
