Italian bean salad

Preparation time: 10 minutes

Ingredients
1 small onion, finely chopped
1 stalk celery, finely chopped
1 red chilli, seeded and chopped
10 ml chopped oregano
400 g each, of canned butter beans, sugar beans and red kidney beans, drained
6 ripe tomatoes, seeded and chopped
45 ml chopped fresh parsley
1 lemon, juice
salt and pepper
DRESSING
60 ml olive oil
45 ml lemon juice
salt and pepper

Method:
Mix all the salad ingredients and season to taste with salt and pepper.
Blend the ingredients for the dressing and pour over the salad.
Stand for at least 2 hours to allow the flvours to develop.
