Make phyllo triangles instead of cigars. Cut the folded sheet of pastry into thick strips. Place a little filling in one corner, then fold over to form a triangle. Wrap up with the remaining part of the strip of pastry to close the triangle on all sides. Vary the filling by adding raisins or sultanas instead of half the dates, or use different nuts. Serve with afternoon tea, or warm with ice cream or whipped cream and fresh fruit as a decadent dessert.

Cook's Tips
You will find phyllo pastry in the fridge or freezer section of your local supermarket. Phyllo pastry dries out quickly so you need to keep the pastry covered with a damp cloth while you are working. You should also use a couple of sheets of pastry, with melted butter brushed in between, as the pastry is thin and will break easily if there aren't enough layers.
