Cook's Notes

Petits fours from None
Petits fours are small, rich, decoratively iced cakes. These bite-sized morsels are traditionally square or rectangular, but you could also use biscuit cutters to cut out hearts or other shapes.

Decoration ideas
Once the icing has hardened you can put the petits fours into small silver, white or pink paper cups. You could also decorate them by drizzling the pink ones with melted white chocolate. Add a few drops of pink food colouring to the melted white chocolate and mix to make pink. Use this to decorate the white petits fours. Or make a darker pink icing and use it to pipe hearts or other designs.

Cook's Tips
Allow the cake to cool completely before cutting into squares. It is even easier to work with if it's a day old. You can save time by buying a read made sponge cake and cutting it into cubes. Make sure the icing isn't too thin otherwise it will run off and not coat the cake properly. Add a little more icing sugar to the icing if this happens. Decorate the petit fours before the icing has set otherwise the decorations won't stick.
