Vanilla Gelato from FAIRLADY

Gelato (the Italian word for ice cream) is made with milk and no cream, so it is slightly lower in fat than American?style ice cream and you can make it without an ice?cream maker. So bowl everyone over on sunny spring days by serving cones of your made?from?scratch gelato.

Play with different flavours but remember that adding ingredients like honey and alcohol will make the gelato softer and less likely to freeze solid. This can be a shortcut to eliminating the freezing processing steps but be careful not to add too much.

Tips for ices
Water ices or ice creams made with fruit will have a longer freezer life if made with cooked fruit, but that wonderful just?picked flavour will be lost. Add lemon juice to fruit purees to set the colour and enhance the flavour. Ice cream can be molded into bombes by layering different flavours. Be sure to freeze each layer before you add the next.
