Caesar Salad from Home
Caesar salad is one of those simple, classic dishes that has been served for over 80 years for its flavourful, healthy qualities. It is ideal as a starter or light meal.

Everyone has their favourite version of Caesar salad, which is often called 'the king of all salads'. It has nothing to do with Julius Caesar, but was in fact created in 1924 in Tijuana, Mexico, by restaurant owner and chef Caesar Cardini.

According to one of the many stories that are told about the salad?s creation, it was hastily made from leftover ingredients for a group of Hollywood actors who were touring with the Prince of Wales.

The original ingredients were cos lettuce leaves, coddled eggs (eggs cooked briefly in the shell in gently boiling water), garlic, Worcester sauce, lemon juice, olive oil, freshly-grated Parmesan, croutons and salt and pepper.

Hints and Tips
Dry the salad leaves very well to ensure that the dressing clings to the leaves.
If necessary, the leaves may be refrigerated until serving.
Try to use day-old ciabatta loaf or bread or, if you are in a hurry, buy ready made croutons.
Use anchovy fillets instead of Worcestershire sauce.
Substitute chicken and bacon with seared tuna.
