Vegetable Tempura

Vegetable Tempura from True Love

Be creative with your vegetables and treat your guests to this exquisite Japanese delicacy. Tempura is a batter-dipped, deep-fried dish made with good quality vegetables, fish or seafood. It is great for light meals or as part of the snack tray.

Ingredients

1 medium onion
 8 Portobellini mushrooms
 100 g asparagus
 100 g baby corn
 50 g green beans, halved
 1 baby aubergine, thinly sliced
 1 small red pepper, seeded and cut into squares
 1 medium carrot, thinly sliced, diagonally
flour for dusting the vegetables
oil for deep-frying
Batter:
 1 large egg, beaten slowly
 375 ml ice cold water
 250 ml flour
 250 ml maizena (corn flour)
pinch of salt
Dipping sauce:
 125 ml fish sauce
 80 ml light soya sauce
 80 ml rice vinegar
 30 ml tom yum paste
 15 ml grated fresh ginger or pickled ginger

Step 1

Halve the onion from the root end. Insert toothpicks at regular intervals to hold onion rings together and slice between. Remove and discard mushroom stems and cut accross in the top of the caps.
