Soufflés from Ideas

Soufflé's are easy to make, quick to prepare and quite delicious. A soufflé is an airy mix of eggs, butter and flour that can be combined with a purée of vegetables, grated cheese, meat, flaked fish or chicken, or an array of sweet flavours. It's also a chic way to use up leftovers. Follow these basic rules to ensure a successful soufflé.

Step 1

Brush the inside of the dish with melted butter and dust with the breadcrumbs to prevent the soufflé from sticking. Tie a double band of greaseproof paper around the dish to hold the rising souffle in place (remove it carefully before serving). A 3 cm overlap is ideal if it is too high, it will prevent the heat from penetrating. Brush the inside of the paper with butter.
