Soufflé's are easy to make, quick to prepare and quite delicious. A soufflé is an airy mix of eggs, butter and flour that can be combined with a purée of vegetables, grated cheese, meat, flaked fish or chicken, or an array of sweet flavours. Ingredients
30 ml butter20 ml fine browned breadcrumbs, plus extra for topping
30 ml flour
300 ml hot milk
5 ml prepared English mustard
5 large eggs, separated
150 g grated Cheddar or Gruyere, mixed with some Parmesan cheese
cayenne pepper, to taste
1 large egg white

Step 1
Brush the inside of the dish with melted butter and dust with the breadcrumbs to prevent the soufflé from sticking. Tie a double band of greaseproof paper around the dish to hold the rising souffle in place (remove it carefully before serving). A 3 cm overlap is ideal if it is too high, it will prevent the heat from penetrating. Brush the inside of the paper with butter. |
