Fudge was invented in the United States about 100 years ago. The exact origin is in dispute but most stories say that the first batch of fudge was the result of caramel toffees having gone wrong.

Ironically, messing up fudge is one of the easiest baking mistakes to make.

 800 g sugar
 100 g butter
 250 ml milk
 1 pinch of salt
 1 x 397 g can sweetened condensed milk
 10 ml vanilla extract

Step 1

Place the sugar, butter, milk and saltin a saucepan and heat slowly, without boiling, while stirring with a wooden spoon until all the sugar has dissolved. Wash down the sugar crystals from the sides of the saucepan using a pastry brush dipped in clean water.
