Chorizo and buffalo mozzarella olive rolls
Ingredients
2
olive rolls, cut in half
15 ml
basil pesto
1
chorizo sausage, sliced
rocket to serve
1
round of buffalo mozzarella, sliced
extra-virgin olive oil, to serve
salt and freshly ground black pepper
green olives stuffed with feta, to serve
Method:
Spread cut surfaces of rolls with pesto.
Pack with chorizo, rocket and cheese.
Drizzle oil over, season and serve with olives.
