Flavoured mayonnaises

Ingredients
250 ml homemade or good-quality bought mayonnaise
ANCHOVY MAYONNAISE
20 ml anchovy paste
PESTO MAYONNAISE
125 ml pesto sauce
TOMATO BASIL MAYONNAISE
15 ml tomato paste
45 ml finely chopped basil
dash of Tabasco sauce
APPLE HORSERADISH MAYONNAISE
1 small apple, peeled and finely grated
25 ml finely grated onion
75 ml creamed horseradish
15 ml lemon juice
50 ml freshly chopped dill
YOGHURT AND MINT MAYONNAISE
125 ml plain yoghurt
250 ml mint leaves, washed, dried and chopped

Method:
To 250 ml homemade or bought mayonnaise, add ingredients as listed for each type.
