Grilled pepper pesto
Ingredients
3
large red sweet peppers, grilled and skinned
2
cloves garlic, peeled
150 g
sun-dried tomatoes
250 ml
feta cheese, broken into chunks
75 g
toasted sunflower seeds
250 ml
olive oil
salt and milled pepper
Method:
Place all ingredients, except oil and seasoning, in the bowl of a food processor or blender.
Blend for 10 seconds, then add oil in a steady stream until mixture is velvety pink. Season to taste and blend again briefly.
Store in a clean glass jar. Makes 500 ml.
