Chinese chicken salad

Ingredients
200 g Chinese vermicelli (cellophane noodles)
250 g cooked chicken
1 cucumber
handful peanuts
handful coriander
Dressing
2 cloves garlic
5 ml minced ginger
5 ml minced chilli, optional
30 ml soy sauce
15 ml sesame oil
15 ml honey
1 orange, juice

Method:
Soak and cook noodles according to packet instructions. Rinse with cold water and drain.
Toss noodles with chicken, cucumber, peanuts and coriander.
Mix dressing ingredients together and pour over noodle mixture.
Mix well to combine flavours.
