Morogo, carrot and red pepper stir-fry
Ingredients
45 ml
oil
2
onions, sliced
1
large carrot, thinly sliced into strips
1
red pepper, sliced into strips
6
rashers bacon, chopped
1
lemon, grated peel
1
bunch spinach, thinly sliced
salt and cayenne pepper to taste
hard-boiled eggs, quartered (optional)
Method:
Heat oil and sauté onion, carrot, red pepper and bacon until soft.
Add lemon rind, spinach and seasoning. Stir-fry to mix.
Cover and cook for 15 minutes, stirring occasionally.
If desired, garnish with hard-boiled eggs and serve warm with pap.
