Summertime chicken soup
Ingredients

onions, chopped
1
garlic clove, crushed
15 ml
olive oil
350 g
baby potatoes, halved and peeled (or leave skin on)
200 g
small leeks, washed well and sliced thickly
1 litre
chicken stock
250 g
pasta of your choice
125 g
green beans
1
bunch spinach, chopped
salt and milled pepper
400 g
cooked chicken, diced
60 ml
pesto and Parmesan cheese shavings to serve
Method:
In a large pan, sauté onions and garlic in heated oil until onions are transparent.
Add potatoes, leeks and chicken stock. Simmer for 15 minutes, then add pasta, beans, spinach, salt and pepper. Cook until pasta is al dente.
Add chicken and heat through. Ladle soup into bowls.
Serve with a dollop of pesto and garnish with Parmesan shavings.
