Sun-dried tomato pesto
Ingredients
150 g
sun-;dried tomatoes in oil, drained
8
garlic cloves, crushed
100 g
flaked almonds, roasted
1
lemon, juice
100 ml
freshly grated Parmesan cheese
50 ml
oil from the sun-;dried tomatoes (you may need more)
salt and freshly ground black pepper
Method:
Place all the ingredients in a food processor and process until smooth. Add more oil if the mixture is too thick.
Makes about 375 ml pesto.
