Fish strips in beer batter

Ingredients
CUCUMBER SAUCE
1 English cucumber, finely grated
75 ml mayonnaise
75 ml plain yoghurt
5 ml lemon juice
BEER BATTER
315 ml cake flour
2 ml salt
315 ml beer
black pepper to taste
oil for deep-fat frying
600 g frozen hake fillets or cutlets (skinned) while frozen, defrosted
juice of a lemon
seasoned cake flour

Method:
Sprinkle the cucumber with a little salt and leave to drain well in a colander for about 15-30 minutes. Add the remaining ingredients and stir. Spoon into a serving bowl and chill until just before serving. Beat all the ingredients for the batter together until blended. Heat the oil until hot. Cut the fish into strips and sprinkle with lemon juice. Roll in the seasoned flour, taking care that the strips do not break. Using a slotted spoon, dip the fish strips in the batter and fry three at a time in the hot oil until golden brown and cooked. Drain on paper towelling, season with salt and serve with cucumber sauce and potato chips. Serves 4.
