Chicken cakes with radish salad

Ingredients
One cooked chicken
1 lemon grass
one hand full of fresh coriander
5 small spring opnions
2 garlic cloves
15 ml lemon juice
15 ml sugar
30 ml soy sauce
2 eggs
1 c bread crumbs soaked in 75ml water
olive oil
Radish salad ingredients
300 g radishes
3 small spring onions
cucumber one quater
one hand full of fresh coriander
50 g cashew nuts
15 ml lemon juice

Method:
Remove skin from chicken and then remove it from the bones. Remove hard skin from lemon grass and chop the inside with spring onions. Place the chicken, coriander, garlic, lemon juice, sugar, soy sauce and two eggs in a blender. Mix in breadcrumbs with your hands and add pepper and salt for flavour. Form into patties and place in a greased baking tray. Cover patties/cakes with oil and bake for 30 to 40 min at 200 degrees C, turn after 20 min.

Radies salad
Cut radishes in half and chop the chilli and spring onions fine. Halve the cucumber, scrape out the seeds and cut in slices. Mix the olive oil, lemon juice, mustard, salt and black pepper. Add all ingredients to a salad dish.
