Mediterranean beef rolls
Preparation time: 20 minutes
Cooking time: 15 minutes
Ingredients
4
beef schnitzels
2
cloves garlic, crushed
45 ml
sun-dried tomato pesto
100 g
feta cheese, crumbled
1
large egg, beaten
flour, for dusting
100 g
dried breadcrumbs
oil, for frying
Method:
Top each beef schnitzel with some cheese, garlic and pesto.
Roll up and secure with a toothpick.
Dip each roll into the egg, then into the flour and then the breadcrumbs.
Heat a thin layer of oil in a large frying pan and cook rolls for 10 to 15 minutes, until golden brown and cooked through.
Serve with a baked potato and salad.
Variation
Cut the beef schnitzels into thin strips and toss in sun-dried tomato pesto and garlic.
Fry until browned and serve with rice.
