Baked fish with mayonnaise and breadcrumb crust
Ingredients
1 kg
fresh hake or kingklip fillets, skinned
salt and freshly ground black pepper
60 ml
mayonnaise
200 ml
fresh breadcrumbs
80 ml
finely grated Parmesan cheese
80 ml
finely grated mature Cheddar cheese
5 ml
seafood masala
Method:
Preheat the oven to 220 ºC and grease an ovenproof dish with butter or non-stick spray.
Place the fish (cut into 4 portions) in the dish, season with salt and freshly ground black pepper and spread each fillet with 15 ml (1 tbsp) mayonnaise.
Mix the breadcrumbs, cheeses and masala and sprinkle on top.
Bake the fillets uncovered, for 15 to 20 minutes or until they can be flaked with a fork.
Serve with baby potatoes and a green salad.
