Vegetable chips
Ingredients

large beetroot
1
large sweet potato
1
aubergine
1
courgette
1
small butternut
oil for frying
Method:
Peel the vegetables and slice them into very thin strips.
Heat the oil and add the vegetables a few at a time. Cook until golden and drain the chips on paper towel.
Sprinkle with salt to taste and serve immediately.
