Grilled caprese sandwich
Ingredients

slices white farmhouse bread
16
slices mozzarella cheese
4
ripe tomatoes, sliced
30 ml
basil pesto
butter for spreading
black olives and coarse black pepper to serve
Method:
Place 4 slices of bread on a work surface, cover each with a layer of cheese, top with tomato and then a generous spread of basil pesto.
Top with the remaining slices of bread. Butter both outer sides of the sandwich.
Heat a large frying pan. Place sandwiches in frying pan, press down with a spatula and cook until golden brown on both sides and cheese is oozing (about 3 minutes per side).
While hot, cut in half and serve with black olives and coarse black pepper.
