New potato and basil salad
Ingredients
450 g
baby or new potatoes
salt and black pepper
250 ml
mayonnaise
45 ml
basil pesto (or more to taste)
fresh basil leaves to garnish
Method:
1. Scrub, clean and boil potatoes until just tender. While the potatoes are cooking, mix mayonnaise with pesto.
2. Drain potatoes, and make a small cross in each one. Season potatoes with salt, pepper and pesto mayonnaise. Scatter fresh basil leaves over and serve with a braai.
