Fresh oysters on crushed ice

Ingredients
12 fresh oysters per person
crushed ice
2 medium lemons
Tabasco sauce
freshly ground black pepper

Method:
How to shuck an oyster: Place oyster, wrapped in a folded napkin, on a firm surface with the flatter shell uppermost. Holding oyster firmly with one hand, insert the tip of a flat knife or oyster knife into the small gap in the hinge. Twist blade to snap shells apart. Slide knife blade along inside of upper shell to sever muscle that holds shell. Clean out any bits of broken shell with the point of knife. Make sure the liquid of the oyster does not spill. Serve oysters on a bed of crushed ice, with lots of lemon wedges, using freshly ground black pepper and Tabasco sauce to taste, and crusty bread to mop up oyster juice.
