Batter recipe for fritters
Ingredients
250 ml
cake flour
45 ml
vegetable oil
250 ml
cold water
oil for deep frying
salt and sugar
fresh elder flowers, washed and dried
Method:
1. Put flour into a mixing bowl and add the oil gradually, stirring to blend. Slowly add the water, stirring constantly until the mixture is the consistency of thin cream. Add a pinch of salt and sugar.
2. Dip flowers into batter, shake off excess and deep fry until golden. Drain on kitchen paper. Serve with a good dredging of icing sugar.
