Hot and spicy chicken with fruit

Ingredients
8 chicken thighs and drumsticks
2 large onions. Finely chopped
3 cloves garlic, crushed
5 ml red chillies, chopped
7 ml cinnamon
5 ml allspice
10 ml mixed herbs
410 g whole peeled tomatoes
15 ml tomato paste or pesto
45 ml fresh parsley
15 ml brown sugar
3 ml freshly ground black pepper
125 ml chicken stock
500 g sweet potatoes, peeled and cubed
1 small pineapple, cubed
3 bananas, thickly sliced
30 ml butter for browning fruit
75 ml fresh coriander leaves

Method:
Preheat a 5 litre casserole and brown the chicken pieces on both sides, cover with the lid and reduce heat and continue cooking for a further 5 minutes. Remove chicken pieces and add onions, garlic, chillies, spices and herbs. Cover and allow onions to cook very slowly for at least 15 minutes. Stir from time to time. Add the tomatoes, tomato paste, parsley, sugar, black pepper and chicken stock and bring to the boil. Add chicken and sweet potatoes, cover with lid. Simmer for 1 hour. Remove chicken and reduce liquid if necessary by boiling rapidly. Just before serving quickly fry the pineapple and banana in a little butter. Return chicken to sauce, add fruit and sprinkle with fresh coriander leaves.
