Tuna and cucumber parcels
Ingredients
500 g
sashimi-quality tuna, cut into large chunks
15 ml
crushed garlic
15 ml
minced ginger

big lemon (juice only)

orange (juice only)
5 ml
brown sugar
15 ml
fish sauce

cucumber
DIPPING SAUCE
2
red chillies, chopped
250 ml
white wine vinegar
75 ml
white sugar
30 ml
fresh lime juice
15 ml
fish sauce
Method:
Place tuna chunks in a shallow dish. Mix garlic, ginger, citrus juices, sugar and fish sauce together and pour over tuna. Leave to marinate for about 2 hours.
Meanwhile, blend dipping sauce ingredients together and set aside.
Using a potato peeler, shave long ribbons off cucumber and cut in half. Drain tuna. Wrap a piece of tuna in a cucumber ribbon and secure with a lemongrass stick, simple bamboo skewer or whatever else you can find. Serve with dipping sauce on the side.
