Hearty beer batter fish and chips
Ingredients
375 ml
cake flour
5 ml
salt
10 ml
sugar
5 ml
baking powder
340 ml
beer
flour for rolling
4
pieces fish, cut into bite-size pieces
1
lemon, sliced for garnishing
oil for deep-frying
Method:
Mix dry ingredients in a bowl. Whisk in beer and beat until there are no lumps. Leave the batter to rest for about 20 minutes. Meanwhile, roll fish pieces in flour. Heat enough oil to deep-fry them until very hot. Dip the fish pieces into the batter and fry until golden brown. Dip lemon slices in batter and fry until golden too. Serve on a scallop shell garnished with fried lemon slices.
Serves 4.
