Grapefruit peel morsels

Ingredients
4 thick-skinned grapefruit
400 g castor sugar, plus extra for coating

Method:
1. Peel the grapefruit, keeping a bit of the pith. 2. Cut the peel into long slices approximately 1 cm wide. 3. Place in a saucepan, cover with water and boil for 5 minutes. Drain. Repeat this 4 more times. 4. Drain well and return to the saucepan with the castor sugar. 5. Cook gently, stirring continuously, until the sugar has dissolved and has coated the peel. 6. Preheat the oven to 110 ºC. 7. Separate the pieces and place them on an oven rack over a baking tray. 8. Bake for a few hours until quite dry. 9. Cool completely. 10. Roll the peel in extra sugar and store in an airtight container.
