Kumquat marmalade

Ingredients
2 kg kumquats
1 large piece of root ginger
3 litre water
2 kg white sugar

Method:
1. Thinly slice the kumquats and remove and discard the pips. Peel and thinly slice the ginger. 2. Place the sliced kumquats and ginger in a medium-sized heavy-based saucepan with the water. Bring to the boil and simmer for 1 hour, or until the skins are completely soft. 3. Add the sugar and gradually bring the mixture to the boil again, stirring to dissolve the sugar. Boil for about 20 minutes, or until the marmalade has reached setting point. 4. Pour into sterilised jars and seal. Makes about 2,5 litres.
