Elderberry syrup

Ingredients
2 litre elderberries, carefully stripped of their stalks with a fork (the stalks taste unpleasant, so discard)
1 kg sugar
1 cinnamon stick
10 cloves
10 pimento berries
2 lemons, juice
15 ml lemon zest
1 litre water

Method:
An excellent cordial which can also be stored for winter coughs and colds.
Place all ingredients in a saucepan. Gently simmer with the lid on for 15-20 minutes. Stand and cool. Strain.
Pour into a pretty bottle. Store in the fridge. (It keeps for months.)
Pour 1/4 of a glass of syrup, and top up with iced water.
Float a few elder flowers in it and serve as a refreshing drink.
Add hot water to 1/4 cup syrup, to fill the cup, a dash of brandy and a slice of lemon, and sip slowly to ease a cough or cold or just as a winter warmer.
