Microwave sweet potatoes with brandied marmalade glaze
Ingredients
1 kg
sweet potatoes, peeled and dipped in orange juice
30 ml
water
125 ml
orange marmalade
125 ml
orange juice
30 ml
fresh ginger, grated
5 ml
French mustard
15 ml
brandy
15 ml
butter
Method:
1. Microwave potatoes with water in a microwave/serving bowl for about 10 minutes on high. (potatoes should be firm). Drain well and set aside.
2. Mix marmalade, orange juice, ginger and mustard in a bowl and boil in microwave for 2 minutes.
3. Stir in brandy and butter. Pour over potatoes.
4. Microwave on high for 8-10 minutes until tender. Serve as a side dish.
Serves 4.
