Roast chicken salad
Ingredients
250 ml
good-quality mayonnaise
125 ml
basil pesto
2
large chicken breasts, roasted and cut into bite-sized pieces
1
baby cos lettuce
80 g
Parmesan cheese, grated
salt
freshly ground black pepper to taste
Method:
In a medium-size bowl combine mayonnaise and pesto. Add chicken and stir to coat thoroughly. Top individual lettuce leaves with chicken. Sprinkle with Parmesan cheese, season, roll up and serve.
Serves 4.
