Parmesan cheese pork chops with tomato sauce
Ingredients

pork chops
salt and pepper
cake flour
3
eggs
80 g
Parmesan cheese
oil for frying
TOMATO SAUCE
15 ml
oil
4
tomatoes, peeled and chopped
50 ml
wine
sugar
basil
salt and pepper
Method:
Remove the rind and most of the fatty layer on the chops and season to taste with salt and pepper. Sprinkle with cake flour on both sides.
Beat the eggs well, add the Parmesan cheese and mix.
Dip the pork chops in the egg mixture and fry in oil until browned on both sides and done. Drain on kitchen towelling.
Heat the oil and fry the tomatoes slightly. Add the wine, sugar and seasonings to taste, and simmer until most of the liquid has evaporated.
Serve with the pork chops and parsley potatoes.
