Char-grilled sirloin with Café de Paris butter

Ingredients
1 kg sirloin steaks
salt and milled black pepper to taste
CAFÉ DE PARIS BUTTER
125 ml chopped parsley
1 onion, finely chopped
1 clove garlic, crushed
10 ml curry powder
15 ml capers, drained
50 ml Worcestershire sauce
50 ml lemon juice
10 ml chopped basil
10 ml chopped thyme
10 ml ground ginger
5 egg yolks
5 ml beef stock
500 g butter, diced

Method:
CAFÉ DE PARIS BUTTER: Combine all ingredients in a food processor or blender until smooth. Braai steaks over hot coals for 3 minutes on each side (medium rare). Season to taste and leave in warm place for 5 minutes. Serve topped with Café de Paris butter.
