Filled country-style focaccia
Ingredients

crusty focaccia
100 ml
olive oil
45 ml
tomato chutney
12
slices cold cooked chicken breast
6
slices Parma ham or shaved ham
12
slices avocado
dash lemon juice
salt and milled black pepper
12
sprigs watercress
Method:
Slice focaccia horizontally into 3 layers.
Brush first layer with olive oil and spread a thin layer of tomato chutney over.
Cover with a layer of chicken and second slice of focaccia. Layer Parma ham and avocado on top.
Season with lemon juice, salt and pepper.
Add a little more chutney, cover with watercress sprigs and top with final slice of focaccia.
Press down lightly and cut into thick wedges, using a sharp knife.
