Potato and feta towers
Ingredients
2
large potatoes, parboiled
olive oil
2
tomatoes, sliced
feta cheese
30 ml
capers, chopped
3
gherkins, finely chopped
olive oil and white wine vinegar
salt and milled pepper to taste
Method:
Slice potatoes thickly. Heat a little olive oil to very hot and sauté potatoes to brown slightly.
Stack potatoes, tomatoes and feta cheese slices to make towers.
Mix capers, gherkins, olive oil, vinegar and seasoning, drizzle over towers and serve with a green salad.
