Tuna and butter beans on focaccia
Ingredients
200 g
tuna in oil, drained
410 g
butter beans, drained
30 ml
freshly chopped parsley
sea salt and milled black pepper
5 ml
capers
60 ml
olive oil
4
slices focaccia, toasted
1
medium to large tomato, thinly sliced
1
red onion, thinly sliced
Method:
Break tuna up into chunks. Mix lightly with butter beans, parsley, salt, pepper, capers and half the olive oil.
Brush focaccia with remaining olive oil.
Layer tomato slices on top of focaccia, heap spoonfuls of tuna and bean mixture on top, then arrange onion rings over mixture.
