Miniature waffles with marinated oranges

Ingredients
250 ml water
500 ml sugar
190 ml pure orange juice
1 stick cinnamon
1 orange, thinly sliced peel
4 oranges, peeled and sliced
8 miniature waffles
grated dark chocolate (optional)
whipped cream to serve (optional)
orange liqueur (optional)
mint sprigs to decorate

Method:
Bring water, sugar, orange juice, cinnamon and orange peel to boil. Reduce heat slightly and boil until a thickish syrup forms. Add orange slices and boil for about 5 minutes. Meanwhile, toast waffles according to packet instructions. Serve waffles with oranges, orange syrup, grated chocolate, cream and a sprinkling of liqueur, if using. Decorate with mint leaves and orange strips. TOTAL KILOJOULE COUNT: 9 875 kJ (2 360 Cal). A portion: 2 470 kJ (590 Cal).
