Baked fish with parsnip hash browns
Ingredients

prepared English mustard
900 g
hake or kingklip fillets
salt and milled pepper

rashers back bacon, rinds removed
25 ml
butter

large onion, peeled and chopped
750 g
parsnips, peeled, cubed and cooked
15 ml
olive oil
Method:
Preheat oven to 220 ºC.
Smear a little mustard on each piece of fish. Season. Wrap 1 bacon rasher around each portion of fish. Place on a lightly oiled baking sheet.
Heat butter in a frying pan and sauté onion until golden, about 10 minutes. Add to parsnips and mash coarsely. Season. Shape mixture into 12 small patties (hash browns) or 6 large ones.
Heat olive oil in a frying pan over moderate heat and fry patties on both sides until golden. Keep warm while baking fish.
Place fish in oven and bake for 10 minutes, or until fish flakes easily when tested with a fork.
Serve fish and hash browns with salad or cooked vegetables.
