Samoosas and chapatis
Method:
Basic dough: Mix cake flour with lukewarm water, a bit of coconut oil and vegetable fat. Knead together until smooth and pliable. Form into large balls, cover and leave to rest for about 30 minutes. FOR SAMOOSAS: Roll dough out into a circle until very thin. Dust surface with flour. Leave to rest and dry for a few minutes. Cut into strips and place filling of your choice. Shape into samoosas. Deep-fry in hot oil. FILLING: Fry together 300 g minced meat, 1 chopped onion, 1 crushed garlic and grated ginger. Season with salt, black pepper and lemon juice. FOR CHAPATIS: Roll out dough into a large circle. Stretch out and make a large hole in the centre. Tear and form into a long strip, shape strip of dough and form into tight circles. Cover and allow to rest. Roll out again until thin and flat. Shallow-fry in hot oil on a gridle or heavy-based frying pan.
