Mandazi (East African breads)

Ingredients

cardamom pods
450
self-raising flour
45 ml
castor sugar
5 ml
baking powder
5 ml
ground cumin
10 ml
ground ginger
10 ml
snipped chives
1
large egg
30 ml
oil
225 ml
milk
oil for deep-frying
Method:
Crush the cardamom pods and shake out the seeds. Grind in a pestle and mortar or coffee grinder.
Place ground seeds in a large bowl with flour, castor sugar, baking powder, spices and chives. Beat the egg and oil together, then add to the flour mixture.
Mix in with your fingertips, then add milk slowly to make a soft but firm dough.
Knead the dough lightly until smooth and not sticky. Leave in a warm place for 15 minutes. Roll out on a floured surface to a 1 cm thickness.
Use a 6 cm scone cutter to cut out about 15 rounds. Heat oil and deep-fry for 4 to 5 minutes until golden.
Serve as a snack or an accompaniment to a meal.
