Chakalaka muffins

Ingredients
500 ml cake flour
10 ml baking powder
pinch salt
5 ml garlic and herb sprinkle
1 extra-large egg
100 ml sunflower oil
200 ml milk or water
200 ml chakalaka
100 g grated Cheddar cheese

Method:
Preheat the oven to 180 ºC. Grease the hollows of a muffin pan with margarine or spray with non-stick spray. Sift all the dry ingredients together. Mix the egg, oil and milk or water together and mix lightly with the flour mixture. Spoon a large tablespoonful of the batter into each hollow of the muffin pan. Spoon a tablespoonful of chakalaka on top of the batter and sprinkle with grated cheese. Bake for about 20 minutes or until the muffins are done (a skewer inserted will come out clean). Serve hot. These muffins are so deliciously moist and flavoursome, they can be served as is.
