Cardamom circle

Ingredients
1 kg
cake flour
10 g
instant yeast
5 ml
salt
5 ml
ground cardamom
3 ml
aniseed
1 ml
ground cumin
375 ml
milk
180 g
butter
125 ml
sugar
3
eggs, whisked
1
egg yolk, lightly beaten
sesame seeds for sprinkling on top
Method:
Combine the cake flour, instant yeast and seasonings in a large mixing bowl. Heat the milk, butter and sugar together, until the butter has melted. Add the milk mixture and whisked eggs to the flour mixture. Mix and knead well for at least 10 minutes or until the dough is smooth and elastic and no longer clings to your hands. (Add more flour if necessary.) Leave for 10 minutes in a warm place, punch down and break off a quarter of the dough. Shape the remaining dough into a fairly flat circle about 18 cm in diameter. Brush the circle with whisked egg yolk. Shape the remaining dough into a ball and place on top of the circle. Press the handle of a wooden spoon through the centre of the dough, piercing both pieces of dough. Bush the dough ball with egg yolk and sprinkle the loaf with sesame seed. Place on a greased baking sheet and leave in a warm place until doubled in bulk. Bake in a preheated oven at 190 ºC (375 ºF) for about 45-60 minutes or until the bread is golden brown on the outside, and sounds hollow when gently tapped on the bottom.
